Food Porn: Stawberry Cream Cheese Pie
We had a little BBQ with my brother's family yesterday and I'm not too humble to admit that my favorite part was this pie that I made. Soooo good! It really is a great summer treat. It's super easy to make and if you buy the crust it requires no baking! (This is a MAJOR plus when your swamp cooler has been broken since you got your roof fixed).
Crust:
- 1 graham cracker crust (you can make your own, but we just picked one up since they were on sale)
Filling:
- 8 oz cream cheese, softened (FYI, We used fat free cream cheese and it tasted AWESOME!)
- 1/4 cup powdered sugar
- 2 tsp milk
- 1 tsp vanilla extract
Topping:
- 3 cups sliced strawberries (about 1 quart)
- 3/4 cup sugar
- 3 tbsp cornstarch
- 1 1/3 cups cold water
- 1/4 cup strawberry gelatin powder
Directions:
In a small mixing bowl, combine the cream cheese, powdered sugar, milk and vanilla. Pour into crust and top with strawberries. For topping, in a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened. Remove from heat; stir in gelatin until dissolved. Cool to room temperature. Refrigerate until slightly thickened. Spoon gelatin mixture over berries. Refrigerate until set.
